Vegetable Bean Soup
Let's get started...
Makes: 4 Servings
Ingredients:
one/two Lb Assorted Beans (Kidney, Pinto, etc)
One Vidalia Onion - Diced
1/4 Cup Low Fat Yogurt
1/eight Cup Chopped Cilantro
Two Cups Assorted Greens - Chopped
2 Cloves Garlic - Crushed
1 Tablespoons Oil
1 Tablespoons Cider Vinegar
1/2 Teaspoon Salt
1 Cups Diced Or Stewed Tomatoes
Pinch Of Black Pepper

Directions:
1. Soak beans overnight. Drain in the morning.
2. Add beans to onion, garlic, and water in a
saucepan.
three. Add water & simmer.
4. Add remaining ingredients.
five. Continue to simmer until beans are soft.
six. Serve!
