Potato Soup

Makes: four Servings

Ingredients:

2 Russett Potatoes - Diced
one Cup Water
One Teaspoon Dried Parsley
2 Tablespoons Butter
1 White Onion - Sliced & Diced
1 1/2 Tablespoons Vegetable Oil
2 Cups Rice/Soy Milk
Four Celery Stalks - Diced
Salt & Pepper

Directions:

1. Saute vegetables with oil in a saucepan
for up to five minutes.
2. Remove vegetables & add to a large pot with water.
